Maple Pecan Muffins

These muffins are tasty, nutritious, and low in calories if you want to make something in a hurry for breakfast.  For vegans, use oil instead of butter and an eggless substitute.

Preparation Time: 5 - 10 minutes

Cook Time: 15 - 18 minutes
Number of servings: 12

Ingredients: 
1 cup of whole wheat flour
1 cup of unbleached white flour  (use wheat flour to increase fiber)
2 teaspoons of baking powder
1/2 teaspoon of salt
1/3 cup of chopped pecans

1/3 cup of maple syrup (real maple syrup)
1 tablespoon of soft butter or oil
1 egg (organic)
1 cup of water
1 teaspoon of real vanilla (not vanillin)

Instructions
Preheat oven to 375 degrees and grease a 12-cup muffin tin.  Sift flour, baking powder, and salt together.   Stir in nuts.  Beat syrup and butter or oil, and add the egg.  Add water, vanilla, and the dry ingredients.  Stir just enough to mix.  Spoon into muffin tin and bake 15 - 18 minutes.

Fiber -  4 grams (if using all wheat flour - 5 grams)
Sugar -  6 grams 
Protein - 3.5  grams
